Teosinte

Corn comes from a mexican grass called “Teosinte” which was barely edible, small, skinny and had very few kernels that were hard to reach because encased by a hard shell. To peel it you had to hit it with a hard object several times. It had a very dry taste like a raw potato.
Natural corn was first domesticated by indigenous people in Mexico more than 8 000 years ago.
Today, corn is 1 000 times larger than it was 9 000 years ago and much easier to peel and grow. Modern corn also contains 4 times more sugar. About half of these changes occurred since the 15th century, when European settlers started cultivating the crop.
